Ingredients

  • 1 g organic orange
  • 150 g dried apricots
  • 70 g almond kernels
  • 1.5 tbsp honey (25 g)
  • 6 slices whole grain bread
  • 1 apple (or other seasonal fruit)

Instructions

    Wash the orange hot, dry it and grate 1 tsp of zest with a fine grater.

  2. 2.

    Halve the orange, squeeze out the juice and combine the juice with the zest in a bowl.

  3. 3.

    Cut the apricots into pieces, mix them with the orange juice and let them soak covered for 8–10 hours (best overnight).

    Blend the almonds with honey, apricots and soaking liquid in a food processor until smooth. Transfer to a clean screw‑top jar with lid.

    For breakfast scoop out 2 tbsp of spread onto each slice of bread. Cut the apple into wedges or use a melon baller to create small spheres and garnish the toast with them.
