Ingredients

  • 3 untreated lemons
  • 2 untreated limes
  • 75 g butter
  • 200 g sugar
  • 3 eggs

Instructions

    Wash the lemons and limes hot, pat dry and grate the zest. Juice all fruits and strain through a sieve.

    Whisk the butter over a double boiler with sugar, zest, and juice, stirring until the butter melts.

    Beat in the eggs gradually, stir, and continue cooking over the double boiler until the mixture becomes creamy.

    Fill the mixture into hot sterilized jars, seal tightly, let cool, then store in the refrigerator.
