Skyr with passion fruit sauce from Spoonsparrow tastes great for breakfast, as a snack or dessert.

Ingredients

  • 500 g Skyr
  • 15 g agave syrup (1 tbsp)
  • 6 passion fruits
  • 5 g cornstarch (1 tsp)
  • 300 g large oranges (1 large orange)
  • 1 tbsp honey
  • 40 g almond kernels (3 tbsp)

Instructions

    Stir Skyr with agave syrup and refrigerate. While it chills, halve the passion fruits, scoop out the pulp, and mix with cornstarch.

    Squeeze the orange to extract juice. Combine the juice with the passion fruit mixture and honey; simmer gently for 3–4 minutes while stirring. Let the thickened sauce cool for about 5 minutes.

    Coarsely chop the almonds. Divide the chilled Skyr onto four plates, spread it slightly, top with the cooled sauce, and sprinkle the almonds over the surface.
