Ingredients

  • 1 chicory
  • 1 cucumber
  • 1 kohlrabi
  • 2 carrots
  • 1 stalk Celery
  • 2 bell peppers (red and green)
  • 2 Tomatoes
  • 1 Avocado
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper
  • 200 g quark
  • 2 tbsp heavy cream
  • 1 handful mixed herbs (e.g., dill, chives, parsley)
  • Salt
  • white pepper

Instructions

    Wash the chicory and separate the leaves. Peel or clean the cucumber, kohlrabi, carrot, and celery stalk, then cut into sticks. Clean the bell peppers and slice into strips. Dice the tomatoes and arrange all vegetables on a platter.

    For the avocado dip, halve the avocado, remove the pit, peel it, and mash the flesh with lemon juice using a fork. Season with salt and pepper.

    For the herb quark, whisk the quark with heavy cream until smooth. Wash and finely chop the herbs. Mix the herbs into the quark, then season with salt and pepper. Serve the vegetables with the various dips.
