Ingredients

  • 400 g chicken wings (8 chicken wings)
  • 7 tbsp soy sauce
  • 1 tsp dry sherry
  • 40 g peeled sesame seeds
  • 40 g black sesame seeds
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 4 tbsp classic vegetable broth
  • 1 star anise
  • 2 tbsp Rapeseed oil
  • 1 Organic Lime

Instructions

  1. 1.

Wash the chicken wings and pat them dry with kitchen paper. Trim off and remove any wing tips if necessary.

  2. 2.

Separate each wing at the joint and pierce the meat around it several times with a fork.

  3. 3.

Mix 1 tbsp soy sauce and sherry in a bowl and let the chicken wings marinate for about 15 minutes.

  4. 4.

Meanwhile, roast peeled and black sesame seeds separately in a pan without fat. Place them on a flat plate each.

  5. 5.

Add remaining soy sauce, sugar, honey, vegetable broth, and star anise to a pot, bring to a boil and reduce by about half.

  6. 6.

Remove the chicken wings from the marinate and pat dry. Heat oil in a non-stick pan and fry the wings in batches over medium heat for 10-12 minutes on all sides until crispy.

  7. 7.

Brush one side of each wing with the sauce. Press half of the wings into the peeled sesame, the other half into the black sesame. Slice lime into wedges and serve alongside.
