Apple Cake with Pecans

- 250 g flour
- 150 g softened butter
- 150 g sugar
- 1 packet vanilla sugar
- 4 eggs
- 1 tsp Baking powder
- a pinch of salt
- 750 g tart apples
- sugar (for rolling)
- 150 g peeled pecans
- apple juice (for brushing)

Set aside 7-8 halves of pecan nuts, chop the remaining pecans. Peel, halve, core the apples and make cross cuts on the convex side of each half. Beat softened butter with salt, vanilla sugar and sugar until fluffy, gradually add eggs and continue beating until the mixture is frothy. Sift flour with baking powder over the batter and fold in.

Place the dough into a springform pan lined with parchment paper and smooth it out. Arrange the apple halves on top of the dough and press them lightly down. Sprinkle chopped pecans over the dough and bake in a preheated oven at 180 °C (conventional heat) for about 30 minutes. Meanwhile, brush the reserved pecan halves with apple juice, roll them in sugar, and scatter them around the edge of the cake. Continue baking the cake for another 20–30 minutes (do a toothpick test!). Remove from the oven, let it cool slightly, take it out of the pan and set it on a cooling rack.
