Apple Tart with Quark

Ingredients
- 200 g Flour
- 60 g sugar
- 1 pinch salt
- 1 egg
- 125 g butter
- butter (for the baking pan)
- flour (for the work surface)
- 4 apples (e.g., Boskop)
- 2 tbsp lemon juice
- 250 g quark
- 1 egg yolk
- 50 g powdered sugar
- 20 ml apple juice
- 1 tsp Cornstarch
- sugar
- cinnamon powder
Instructions

Mix flour, sugar and salt for the dough. Sprinkle on a work surface, make a well in the center, crack the egg into it and scatter butter pieces around the well. Quickly knead with hands into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Wash the apples, quarter them, remove the core and cut into wedges. Drizzle with lemon juice.

Preheat oven to 180 °C (convection). Butter the tart pan.

Roll out the dough on floured surface and line the pan, forming a rim. Whisk quark with egg yolk, powdered sugar, apple juice and cornstarch. Spread the quark cream over the base.

Arrange apple wedges fan‑shaped on top and bake in preheated oven for about 40 minutes until golden brown. Remove, sprinkle with sugar and cinnamon, and serve sliced warm or at room temperature.
