Sea Buckthorn Cake

Ingredients
- 300 g butter
- 50 g grated hazelnuts
- 150 g brown sugar
- 0.5 packet vanilla sugar
- 4 egg yolks
- 250 g flour
- 2 tsp Baking powder
- 1 tbsp cocoa powder
- 8 tbsp egg liqueur
- 500 g sea buckthorn berries
- 4 eggs
- 4 egg whites
- 50 g Brown sugar
- 8 tbsp egg liqueur
- 100 g honey
- 0.5 packet vanilla sugar
- 2 tbsp Cornstarch
- 100 g whipping cream
- 125 g whipping cream
- 100 g sea buckthorn berries

Line a baking sheet with parchment paper. For the dough, beat butter, sugar and vanilla sugar until fluffy. Gradually fold in egg yolks. Mix flour with baking powder and cocoa, then stir in the nuts. Spread the dough onto the sheet, smooth it out and brush with egg liqueur.

Wash the sea buckthorn berries, pat dry and spread half of them over the dough. Separate the eggs and beat all eight egg whites very stiffly. Whisk in the sugar. Mix the yolks with egg liqueur, honey, vanilla sugar and cornstarch, then fold in the cream.

Gently fold everything into the stiff egg whites and spread over the dough. Distribute the remaining sea buckthorn berries on top. Bake in the oven at 160°C for 45 minutes until golden yellow. Let cool before serving, then garnish with whipped cream and the remaining sea buckthorn berries.
