French-Style Apple Cake

Ingredients
- 170 g spelt flour type 1050
- 100 g Ground Almonds
- 1 egg
- 4 tbsp Honey
- a pinch salt
- 1 tsp lemon zest
- 150 g cold butter
- 200 g Sour Cream
- 1 kg tart apples
- 2 tbsp apricot jam
Instructions

Mix the flour with the almonds and mound on a work surface. Create a well in the center, add the egg, 1 tbsp honey, salt, and lemon zest. Place butter pieces around the rim, quickly combine into a smooth dough. Form a ball, wrap, and refrigerate for 30 minutes.

Meanwhile, peel, quarter, core, and slice the apples thinly.

Roll out the dough on lightly floured surface, transfer to a pan, shape a border. Prick the bottom with a fork multiple times. Brush with sour cream. Arrange apple slices tightly over the dough and brush with the remaining 1 tbsp honey.

Bake in a preheated oven at 250 °C (220 °C fan; gas highest setting) for 25–35 minutes until golden yellow.

Warm the jam with leftover honey in a saucepan, brush over the tart, and bake another 5 minutes.
