Apple Strudel with Cream

Ingredients

  • 125 g flour
  • 1 pinch salt
  • 2 tbsp oil
  • 750 g tart apples (e.g., Boskop)
  • 2 tbsp raisins
  • 35 g sugar
  • 0.5 tsp ground cinnamon
  • 50 g whipping cream
  • 30 g breadcrumbs
  • 40 g chopped walnut kernels
  • 35 g Butter
  • 1 tbsp milk
  • flour (for the work surface)
  • 1 tsp butter (for the baking sheet)
  • 1 tbsp powdered sugar (to dust)

Instructions

    Put flour and salt in a bowl, make a well. Pour in oil and 125 ml lukewarm water into the well. Knead into a smooth, elastic dough. Shape the dough into a ball, wrap it in cling film and let it rest at room temperature for about 20 minutes.

    Meanwhile peel, quarter, core, and slice apples crosswise into thin wedges. Mix apple slices with raisins, sugar, cinnamon, and cream.

    Melt butter. Roll out the dough on a floured cloth, then stretch it very thin over the cloth using the backs of your hands. Brush with butter and sprinkle with breadcrumbs. Spread the apple mixture over the dough and top with walnuts. Roll up the strudel with the help of the cloth. Place seam side down on a greased baking sheet. Brush with milk and bake in a preheated oven at 200°C (middle rack) for about 40 minutes. Remove and let cool slightly. Dust with powdered sugar before serving and slice into pieces.
