Strudel Packets
Sweet strudel packets with fruit and ginger: here snacking is allowed because the strudel dough comes with little fat. For those who watch their lines.
Ingredients
- 0.5 Organic lemon
- 450 g large pears (2 large pears)
- 100 g small apples (1 small apple)
- 30 g ginger (1 piece)
- 1 tsp Cayenne pepper
- 120 g low-fat quark (6 tbsp)
- 2 tbsp liquid honey
- 1 egg
- 4 tbsp milk (1.5% fat)
- 6 sheets strudel dough
- 20 g ground almonds (2 tbsp)
- 40 g breadcrumbs (4 tbsp)
Instructions

Rinse half a lemon hot, dry it and finely grate the zest. Squeeze out the juice.

Wash, peel, quarter, and core pears and apples. Slice each into thin pieces and place in a bowl. Mix with lemon zest and juice.

Peel and finely grate ginger. In a second bowl mix with cayenne pepper, quark, and honey. Pour over the prepared apple and pear slices.

Separate the egg. Whisk yolk and milk in a small bowl. Lay strudel dough sheets individually on parchment paper. Brush lightly with the egg-milk mixture and fold half-way.

Mix almonds with breadcrumbs and spread 1 tablespoon of the mixture onto the center of each dough sheet.

Add a portion of the fruit-quark mixture over it.

Whisk the egg white slightly, brush the dough edges with it, press together over the filling, and firmly squeeze. Brush the strudel packets with the remaining egg-milk mixture.

Line a baking tray with parchment paper. Place the strudel packets on it and bake in a preheated oven at 180 °C (fan: 160 °C, gas: level 2‑3) on the middle rack for 20–25 minutes.
