Mediterranean Stuffed Squid Tubes
As a snack, starter or side dish: Mediterranean stuffed squid tubes from Spoonsparrow are guaranteed to be well received!
Ingredients
- 400 g squid (1 whole squid), ready-to-use
- 1 red bell pepper
- 1 small zucchini
- 1 onion (diced)
- 1 garlic clove (chopped)
- 4 tomatoes
- olive oil
- Sea salt
- black pepper (freshly ground)
- a pinch of sugar
- Lemon juice
- basil (for garnish)
Instructions

Wash the squid, pat dry. Cut off the arms and dice them.

Wash the bell pepper, halve it, remove seeds and finely dice.

Wash the zucchini, peel if desired and dice it as well.

Rinse tomatoes with hot water, peel, halve, remove pulp and dice.

Combine bell pepper, zucchini, diced squid arms, onion and garlic in a bowl. Season with olive oil, salt and pepper. Stuff the squid tubes with this mixture and secure the ends with toothpicks. Salt and pepper to taste.

Place tomatoes in a baking dish, drizzle lemon juice over them, season with sugar, salt and pepper. Lay the stuffed squid on top and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes.

Slice the Mediterranean stuffed squid tubes and arrange them on the tomatoes. Garnish with basil leaves before serving.
