Apple-Filled Pancakes

- 200 g Flour
- 400 ml milk
- 1 pinch salt
- 3 eggs
- 4 apples
- 2 tbsp lemon juice
- 4 tbsp sugar
- 0.5 tsp cinnamon
- 2 tbsp butter
- 2 tbsp powdered sugar
- 4 scoops vanilla ice cream

Whisk the flour with the milk and salt until smooth, then fold in the eggs until a thick, glossy batter forms; let rest for about 20 minutes.

Preheat the oven to 180°C fan.

Peel, quarter, core, and dice the apples. Mix in the lemon juice. Combine sugar and cinnamon. Pour the batter onto parchment paper on a baking sheet, place it on the middle rack of the oven, and bake for about 10 minutes until golden brown. While the batter bakes, melt the butter, add the apples, cover briefly to steam, then stir in the sugar mixture. Transfer the baked pancake onto a towel, remove the parchment, spread the apple filling over it, loosely roll up, dust with powdered sugar. Slice into pieces and serve each with a scoop of vanilla ice cream and a small sprig of apple twig garnish.
