Pear Milk Rice with Almonds

Ingredients

  • 1 Vanilla bean
  • 500 ml unsweetened almond drink (almond milk)
  • 1 pinch salt
  • 2 tbsp birch sugar
  • 125 g rice pudding grains
  • 1 ripe pear
  • 1 tbsp Lemon Juice
  • 1 pinch Ground cinnamon
  • 2 tbsp almond slivers

Instructions

    Halve the vanilla bean lengthwise and scrape out the seeds. Combine both with the almond drink in a pot, bring to a boil, then add salt and 1 tablespoon birch sugar. Stir in the rice pudding grains, reduce heat, and simmer for 30 minutes while stirring frequently.

    Meanwhile peel the pear and remove the core. Cut into 1 cm cubes. In a small saucepan caramelize the remaining birch sugar, then add the pears and lemon juice. Deglaze with 2 tablespoons water, cover, and simmer gently for about 10 minutes. Season with cinnamon.

    Toast the almond slivers in a non-stick pan without fat until golden brown and fragrant. Remove from heat and let cool on a plate.

    Fill small bowls with the rice pudding and spoon the pear compote over it. Garnish with the toasted almond slivers and serve.
