Apple Crumble Cake with Apricots

Ingredients

  • 300 g soft butter
  • 500 g spelt flour type 1050
  • 4 tsp baking powder
  • 1 tsp grated lemon zest
  • 2 egg yolks
  • 8 tbsp whole wheat sugar
  • 700 g apples
  • 2 tbsp lemon juice
  • 1 pinch cinnamon
  • 80 g dried apricots
  • 200 g Low-fat quark
  • 2 Tbsp whipping cream
  • 2 tbsp honey

Instructions

    Mix butter, flour, baking powder, egg yolks, lemon zest and whole wheat sugar in a bowl and knead into crumbs. Spread slightly more than half of the crumbs on a parchment-lined tray and press firmly with a spoon.

    Wash, peel, quarter, core and chop apples. Toss with lemon juice and cinnamon. Dice apricots and fold in. Whisk quark with cream until smooth and sweeten with honey. Spread over dough, top with apple mixture, then scatter remaining crumbs on the cake. Bake in preheated oven at 200 °C (180 °C fan; gas level 3) for about 40–45 minutes. Cool and serve cut into pieces.
