Apple Compote with Calvados

Ingredients
- 1 bottle semi-dry white wine
- 175 ml Calvados
- 1 stick cinnamon
- 100 g sugar
- 4 tbsp Lemon juice
- 0.5 tsp ginger powder
- 4 cloves
- 1.5 kg small firm apples
- 0.5 sachet canning aid
Instructions

Boil the wine with 700 ml water, Calvados, a quartered cinnamon stick, sugar, lemon juice and spices. Peel, halve, core and cut the apples into wedges, immediately add them to the wine broth and simmer over low heat for about 3 minutes; then remove the apples from the broth and distribute each apple on glasses with one piece of cinnamon stick and one clove.

Bring the wine broth to a second boil and stir in the canning aid according to the package instructions, then pour hot over the apples. Seal the glasses immediately.

Open a glass for serving and distribute the contents into small glasses; it tastes especially good with vanilla ice cream.
