Ingredients

  • 200 g Flour
  • 50 g ground almonds
  • 2 tsp Baking powder
  • 1 pinch salt
  • 0.5 tsp lemon zest
  • 1 egg
  • 120 g sugar
  • 1 vanilla bean (pulp)
  • 80 ml vegetable oil
  • 250 ml buttermilk
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C (350°F) with fan and top heat. Line a muffin tin with paper cups.

    In a bowl mix flour, almonds, baking powder, salt, and lemon zest. In another bowl whisk egg, sugar, vanilla pulp, oil, and buttermilk; add dry mixture and stir until all dry ingredients are wet and the batter is smooth. Fill prepared cups and bake in preheated oven for about 25 minutes.

    Remove, cool, lift out of cups, and dust with powdered sugar before serving.
