Ingredients

  • 1 kg apples
  • 1 lemon (juice)
  • 3 eggs
  • 100 ml Rapeseed oil
  • 100 g Coconut sugar
  • 200 g apple sauce
  • 30 g soy flour (2 tbsp)
  • 150 g spelt whole grain flour
  • 150 g ground hazelnuts
  • 1 tsp cinnamon powder
  • 0.5 sachet baking powder
  • 100 ml Buttermilk

Instructions

    Peel, quarter, core the apples, cut into wedges and immediately drizzle with freshly squeezed lemon juice.

    Add eggs, oil, coconut sugar, apple sauce and soy flour to a mixing bowl. Beat with hand mixer until sugar dissolves.

    Mix spelt flour, ground hazelnuts, cinnamon and baking powder in another bowl and add to the apple mixture.

    Pour in buttermilk and stir into a smooth batter; if too thin, fold in 1–2 tbsp extra flour.

    Grease the baking dish if needed, pour in batter, spread evenly. Layer apple wedges like roof tiles. Bake in preheated oven at 180 °C (160 °C fan) for about 50–60 minutes, test with a skewer.
