Apple Cake with Raisins and Almonds
An apple cake with raisins and almonds provides plenty of healthy fiber. This recipe is part of the Spoonsparrow collection.
Ingredients
- 300 g spelt flour
- 75 g ground hazelnuts
- 225 g butter
- 1 pinch salt
- 150 g raw cane sugar
- 1 egg
- 1.25 kg tart apples
- 2 tbsp lemon juice
- 2 tsp Cinnamon
- 2 tbsp vanilla pudding powder
- 75 g raisins
- 75 g almond sticks
- 1 tbsp powdered sugar made from raw cane sugar

Sift spelt flour with ground hazelnuts onto a work surface and form a well in the center. Distribute butter pieces around the rim, add salt, sprinkle 100 g of sugar over it, and place the egg in the middle. Using a dough scraper, cut into crumbs and quickly knead by hand into a smooth dough. Wrap in cling film and chill for about 30 minutes.

If needed, grease a springform pan. Take two-thirds of the dough and roll it out to fit the pan (including the rim). Line the pan with this dough and shape the edge.

Roll out the remaining dough to the same size and cut into a round lattice pattern with a grid cutter.

Wash, peel, quarter, core, and slice the apples thinly. Mix them with lemon juice, remaining sugar, cinnamon, pudding powder, raisins, and almonds; spread over the base dough. Place the lattice crust on top and press the edges together firmly.
