Apple Cake with Cream and Pistachios

Ingredients
- 100 g flour
- 125 g sugar
- 100 g margarine
- 2 packets vanilla sugar
- 1 tsp Baking powder
- 2 Eggs
- 750 g apples
- 150 ml apple juice
- 0.5 tsp cinnamon
- 1 packet vanilla pudding powder
- 400 g whipping cream
- powdered sugar (for sweetening the cream, to taste)
- 40 g pistachios

Preheat oven to 175 °C. Peel and grate an apple. Mix flour, 100 g sugar, margarine, 1 packet vanilla sugar, baking powder and eggs with a hand mixer into a smooth dough. Stir in apple shreds. Pour the dough into a springform pan lined with parchment paper and bake at 175 °C for about 30 minutes (test with a toothpick).

Remove the edge and place a ring around the base. Peel and dice the remaining apples, then simmer with 75 ml apple juice, cinnamon, 2 tbsp sugar and the remaining vanilla sugar until it boils, cook another 5 minutes. Whisk vanilla pudding powder into the leftover apple juice until smooth, then stir into the boiling apples.

Let it simmer for 1 minute, remove from heat, spread over the cake base and chill for 1–2 hours until set. Beat cream to stiff peaks, lightly sweeten if desired, and spread two thirds of it over the cake. Pipe the remaining cream with a star tip and spray small rosettes onto the cake. Sprinkle pistachios on top.
