Ingredients
- 3 sour apples
- 1 Organic Orange
- 100 g whole‑grain crackers
- 100 g whole‑grain cookies
- 1 tsp ground cinnamon
- 4 tbsp whipping cream

Peel the apples, remove the core and dice them small. Wash the orange hot, dry it, grate the rind, squeeze out the juice and combine with 1 tbsp of zest and the apples in a pot. Steam the apples over gentle heat for 3–5 minutes until soft, then let cool slightly.

Crush the crackers and whole‑grain cookies together in a food processor into crumbs. Mix in the cinnamon and layer alternately with the apples in four glasses. Drizzle the remaining cooking liquid from the compote over the final crumb layer. Whip the cream stiffly and spoon 1 tbsp of it onto the top layer as garnish.
