Cherry Almond Cake

Ingredients
- 5 g Butter (1 tsp)
- 5 eggs
- 75 g coconut palm sugar
- 120 g spelt whole wheat flour
- Salt
- 1 tsp Baking powder
- 150 g Low-Fat Quark
- 100 ml milk (3.5% fat)
- 750 g sweet cherries
- 20 g almond flakes (2 tbsp)
Instructions

Brush 4 round baking dishes (15 cm diameter) with butter.

Beat eggs with sugar until frothy. Add 100 g flour, a pinch of salt, baking powder, quark and milk; mix well.

Wash, pit and drain cherries. Mix loosely with remaining flour.

Fill half the batter into the pans and spread half the cherries on top. Pour remaining batter over, smooth, and sprinkle remaining cherries.

Bake in preheated oven at 200 °C (180 °C fan; gas level 3) for 20–25 minutes until golden brown.

Sprinkle almond flakes and bake for another 10 minutes.

Remove cake from oven and serve immediately.
