Apple and Grapefruit Spread
The apple-grapefruit spread by Spoonsparrow tastes great for breakfast and is wonderful to give as a gift!
Ingredients
- 200 g yellow grapefruit (1 yellow grapefruit)
- 400 g green apples (e.g., Granny Smith)
- 50 g ginger (to taste more or less)
- 200 g coconut blossom sugar
- 2 tsp agar-agar

Peel the grapefruit around the outside with a sharp knife so that no white pith remains visible. Then cut out the segments between the membranes, squeeze the remaining membranes to extract juice and catch the juice. Peel the apples, remove the core, and dice them very finely. Mix the apple cubes with the grapefruit juice and segments. Peel the ginger and slice it into thin strips. Add the coconut blossom sugar and agar-agar to the fruit mixture and stir well.

In a large pot, bring the mixture to a boil over high heat while stirring constantly. Boil for about 5 minutes, bubbling vigorously, and keep stirring. Then perform a gel test; immediately pour the spread into hot-washed jars until full. Seal tightly, set the jars upside down for about 10 minutes, then turn them right side up and let cool.
