Apple Almond Cake

Ingredients

  • 280 g butter
  • 150 g coconut blossom sugar
  • 1 pinch salt
  • 5 eggs
  • 1 Organic lemon
  • 150 g applesauce
  • 400 g spelt flour type 1050
  • 1 tsp cinnamon powder
  • 2 tsp Baking powder
  • 100 ml milk (3.5% fat)
  • 1 kg apples
  • 4 tbsp almond sticks
  • 50 g birch sugar

Instructions

    Whisk 200 g butter and coconut blossom sugar with salt until fluffy. Gradually add the eggs. Rinse the lemon hot, pat dry and grate the zest. Fold in the applesauce, lemon zest, and the flour mixed with baking powder and cinnamon. Slowly pour in the milk. Line a baking sheet with parchment paper and spread the batter on it. Peel, quarter, and core the apples. Slice the quarters into rounds and arrange them side by side over the batter.

    Divide the remaining butter into small pieces and dot the cake with them. Bake the cake in a preheated oven at 200 °C (fan: 180 °C; gas: level 3) for about 40 minutes. Ten minutes before the end of baking, sprinkle almond sticks over the cake. For serving, dust with birch sugar and cut into pieces.
