Anchovy and Olive Pizza

Ingredients
- 250 g flour
- 20 g fresh yeast
- 0.125 l lukewarm water
- Salt
- 3 tbsp olive oil
- 400 g Tomatoes
- 2 tbsp olive oil
- 1 tsp Oregano
- Salt
- Pepper
- 2 Garlic cloves
- 100 g grated Gouda
- 8 small anchovy fillets (anchovies in salt)
- 2 tsp capers
- 10 black olives
Instructions

Put flour in a bowl and make a well in the middle. Crumble the yeast and mix with some water. Put it in the well, dust with flour and cover for 15 minutes. Add the remaining water, salt and oil and knead into a smooth dough.

Let the dough rise covered in a warm place for about an hour until it almost doubles in volume.

Meanwhile blanch the tomatoes, let them cool, peel and cut into cubes. Put them in a pot with 1 tbsp olive oil and simmer over high heat for about 10 minutes.

Season the tomato mixture with oregano, salt and pepper. Finely chop the garlic and stir in.

Rinse the anchovy fillets and pat dry.

Oil a pizza pan, knead the dough again, roll it out and place it in the pan.

Spread the tomato sauce over the dough, arrange the anchovies on top, sprinkle with capers and cheese, add the olives and drizzle with the remaining olive oil.

Bake the pizza in a preheated oven at 250 °C for about 12–15 minutes.
