Ingredients

  • 4 Mark bones
  • 4 slices toast bread
  • Semmelbrösel (as needed)
  • 2 Eggs
  • 0.5 bunch Parsley
  • Salt
  • pepper (from grinder)
  • 1 l clear meat broth
  • 100 g alphabet noodles
  • 1 Zucchini
  • 2 carrots
  • 150 g cauliflower florets
  • 150 g peas (frozen)
  • basil (for garnish)

Instructions

    Bring salted water to a boil in a pot.

    Extract the marrow from the bones. Remove the crust from the bread and dice finely. Add the eggs and chopped parsley on top. Add chopped marrow, salt, and pepper, then process everything into a dough. If needed, add breadcrumbs so the mixture becomes well-formed. Shape dumplings 2–3 cm in diameter, and let them simmer in salted water for about 15 minutes, remove and set aside.

    Bring the salted water back to a boil and cook the noodles until al dente, then drain, rinse with cold water, and let dry.

    Boil the meat broth.

    Wash, peel, and dice the zucchini.

    Peel and dice the carrots. Cut the cauliflower into smaller pieces if desired.

    Add all vegetables to the simmering soup, cook on low heat for about 5–6 minutes. Add noodles and dumplings, warm through, season the soup with salt and pepper, and serve garnished with basil.
