Ingredients
- 350 g potatoes
- 2 onions
- 800 g spinach
- 1 l vegetable broth
- 30 g flour
- 1 tbsp oil
- 2 tbsp butter
- Salt
- Pepper
- 4 tbsp toasted almond slices
- spring onion greens for garnish

Wash and roughly chop the spinach. Peel and halve the onions, then dice finely. Wash, peel, and cube the potatoes. Sauté the diced onions in oil, add broth, and simmer about 10 minutes before adding the chopped spinach with flour that has been whisked smooth with a little water; let it thicken, bring to a boil, and season with salt and pepper.

Cook for another 5 minutes, then puree. Gently stir in the butter. Serve garnished with toasted almond slices and spring onion greens.
