Almond Star

Ingredients
- 250 g peeled almonds
- 6 Eggs
- 250 g powdered sugar
- 1 tsp butter vanilla aroma
- 1 packet grated lemon zest
- 1 tsp ground cinnamon

Instructions

Grind almonds finely in a food processor. Separate eggs. Beat yolks with a pinch of salt and powdered sugar using the whisk attachment until frothy. Fold in vanilla aroma, lemon zest, cinnamon, baking powder, and almonds. Whip egg whites with a few drops of lemon juice to stiff peaks; rinse whisk well before whipping so it sets properly.

Fold one third of the meringue into the almond-yolk cream to loosen the batter. Gently fold in the remaining meringue with a spatula. Grease a star-shaped or 26 cm round springform pan with butter and dust with ground almonds or breadcrumbs so the cake releases easily. Pour batter into pan and smooth top.

Bake in a preheated oven on the middle rack at 175 °C (or 150 °C fan) for about one hour. Cover with parchment during baking. If using a tall star-shaped mold, bake ten minutes longer. Test doneness by inserting a wooden skewer or toothpick into the center; if it comes out with wet batter, bake longer.

Remove cake and let rest for three minutes. Optionally cut along the edge between cake and pan rim with a knife. Transfer to a cooling rack and dust with almonds and powdered sugar after cooling.
