Almond Garlic Soup

Ingredients
- 8 slices of white bread (about 60 g)
- 6 tbsp Olive oil
- 4 cloves garlic
- 200 g almond kernels
- 750 ml meat broth
- 1 tin saffron (0.1 g ground)
- 1 packet saffron strands (0.1 g)
- Salt
- Pepper (freshly ground)
- a pinch cumin (ground)
- 3 tbsp parsley

Cut the white bread into small cubes and crisp them in 4 tbsp oil. Remove and set aside. Peel, chop the garlic and sauté with almonds in the remaining oil until golden yellow. Take both out and blend in a food processor.

Add the mixture to a pot with broth and saffron. Bring to a boil and simmer for 10 minutes. Season with salt, pepper, and cumin. Stir in parsley. Fold two-thirds of the bread cubes into the soup and adjust seasoning. Sprinkle the remaining bread cubes on top and serve immediately.
