Almond Grape Soup

Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 200 g celery root
  • 200 g peeled almond kernels
  • 2 tbsp olive oil
  • 800 ml chicken broth
  • 200 ml coconut milk
  • 100 g seedless grapes
  • Salt
  • Cayenne pepper
  • ground black pepper

Instructions

    Peel and finely dice the onion and garlic. Peel and finely dice the celery root. Roast the almonds slowly in hot oil until golden brown, stirring constantly. Add the onion, garlic, and 150 g of celery, sauté briefly, then deglaze with chicken broth and coconut milk. Simmer gently for about 15 minutes, stirring occasionally.

    Wash the grapes and let them drain well.

    Puree the soup finely and season with salt and cayenne pepper. Divide into bowls, scatter grapes on top, and garnish with black pepper before serving.

    Serve with white bread if desired.
