Ingredients
- 2 Eggs
- 200 ml whipping cream
- 1 tbsp rose water
- 75 g ground almonds (peeled)
- 3 tbsp cornstarch
- 400 ml almond drink (almond milk)
- 60 g sugar
- 1 tsp lemon juice
- 2 tbsp toasted almond flakes
- cinnamon powder

Separate the eggs. In a bowl whisk together the yolks, whipping cream, rose water, ground almonds and cornstarch. Bring the almond drink with the sugar to a boil in a saucepan. Pour it into the almond mixture while stirring, return to the pan and continue stirring until thickened. Beat the egg whites with lemon juice until stiff peaks form. Gently fold the whipped whites into the almond cream with a spatula and pour the pudding into glasses. Cover and chill in the refrigerator for at least 1 hour.

Before serving sprinkle toasted almond flakes and a pinch of cinnamon on top.
