Ingredients

  • 100 g peeled almonds
  • 50 g butter
  • 150 ml heavy cream (min 30% fat)
  • 1 tsp grated unbleached lemon zest
  • 1 pinch freshly ground nutmeg
  • almond flakes (for garnish)
  • fresh dill (for garnish)

Instructions

    Grind half the almonds, finely chop the other half.

    Melt butter in a small saucepan, roast the chopped and ground almonds in it, pour in cream and simmer for 3-4 minutes while stirring.

    Stir in grated lemon zest and nutmeg, transfer to a bowl and serve garnished with almond flakes and fresh dill.
