Ingredients

  • 100 g dark chocolate (at least 60% cocoa content)
  • 100 ml whipping cream
  • 200 g peeled, ground almonds
  • 100 g sugar
  • 2 drops bitter almond aroma
  • 2 egg whites
  • 150 g almond flakes
  • 125 g soft butter

    For the filling, finely chop the chocolate and melt it with the cream in a small saucepan; set aside and chill overnight in the refrigerator. The next day preheat the oven to 150°C fan-forced. Mix the almonds with 50 g sugar and bitter almond oil. Whisk the egg whites with the remaining sugar until very stiff, white, glossy and firm. Gently fold in the almond mixture, spread 0.5 cm thick on a baking tray lined with parchment paper, sprinkle with almond flakes, and bake in the preheated oven for about 15-20 minutes. Remove, cut warm into small triangles, and let cool.

    Beat the butter with an electric hand mixer until creamy; gradually fold in the chocolate cream. Spread half of the triangles with the butter mixture, join each with another almond triangle, and allow to set.
