Almond Orange Shortbread

Ingredients

  • 2 untreated oranges
  • 60 g dark chocolate
  • 2 tbsp cocoa powder
  • 125 g flour
  • 50 g ground almonds
  • 175 g sugar
  • 0.5 tsp cinnamon
  • 1 pinch cloves powder
  • 1 tsp ground allspice
  • 3 egg yolks
  • 150 g butter
  • 1 egg white (for brushing)

Instructions

    Wash oranges hot, pat dry and finely grate the zest. Chop chocolate finely. Sift cocoa powder with flour onto a work surface. Mix chocolate, almonds, 100 g sugar, half the orange zest, cinnamon, cloves, and allspice; add to the bowl. Form a well in the center and pour in egg yolks. Cut butter into pieces and place on the rim. Scrape all ingredients together with a palette until crumbs form. Quickly knead by hand into a dough. Divide dough in half and roll each into ~4 cm thick logs, wrap in cling film, and chill 1–2 hours.

    Preheat oven to 190 °C (top and bottom heat). Line two baking trays with parchment paper.

    For decoration mix remaining sugar with the rest of the orange zest. Brush frozen rolls with beaten egg white and roll quickly in orange sugar. Slice into ~5 mm thick rounds and place on trays. Bake each for 10–12 minutes. Remove, lift from tray with parchment, and cool.
