Mango Quark Dessert

Ingredients
- 30 g chopped almonds
- 1 untreated lime
- 150 ml whipping cream
- 500 g low‑fat quark
- 50 g sugar
- 1 packet vanilla sugar
- 2 mangoes
- some mint
Instructions

Roast the almonds in a small non‑stick pan until lightly browned. Transfer to a plate to cool so they do not burn. Rinse the lime, pat dry and grate its zest (Step 1). Squeeze the lime juice.

Whip the cream until stiff peaks form. Mix the quark with sugar, vanilla sugar, two thirds of the lime zest and half of the almonds. Fold in the whipped cream.

Stand the mangoes upright. Slice off fruit halves on the flattened sides to the core as close as possible. Peel the flesh, cut into cubes and strips.

Place mango cubes in glasses and spread the quark cream over them. Sprinkle with remaining lime zest and almonds. Garnish immediately with mango strips and mint leaves before serving.
