Almond Chocolate Confection

Ingredients

  • 300 g almond sticks
  • 0.5 untreated orange
  • 2 tbsp candied ginger
  • 350 g dark chocolate (min. 50% cocoa)

    Roast the almond sticks in a large dry pan until light brown and fragrant, then remove and let cool. Rinse the orange hot, pat dry, and grate the zest. Chop the ginger as finely as possible.

    Coarsely chop the chocolate and melt it over a double boiler. Mix in the almonds, orange zest, and ginger. Dip two small spoons into cold water and use them to scoop small portions of the almond mixture onto the spoons. Place each portion in a praline wrapper. Refrigerate the almond confection for at least 12 hours until set.
