Ingredients
- 8 elderflower buds
- 100 g flour
- 1 pinch salt
- 1 tbsp sugar
- 1 tsp vanilla sugar
- 0.5 untreated orange (grated zest)
- 150 ml white wine
- 20 ml orange liqueur
- 2 tbsp liquid butter
- 2 egg whites
- 1 l oil (for frying)
- powdered sugar
Instructions

Gently shake the elderflower buds in cold water, then drain on kitchen paper.

Combine flour, salt, sugar, vanilla sugar and orange zest; whisk in wine, liqueur and butter, and let rest 20 minutes.

Beat egg whites to stiff peaks and fold into the dough. Dip elderflowers into the batter and fry in hot oil until golden yellow. Dust with powdered sugar.
