Ingredients

  • 125 g cream cheese
  • 75 g chestnut puree
  • 2 EL powdered sugar
  • 0.5 TL cocoa powder
  • 15 g cocoa powder

Instructions

    Preheat oven to 150°C (300°F) with top and bottom heat. Finely grind almonds with powdered sugar and sift through a fine sieve onto a baking sheet. Bake in the oven for 5-7 minutes, then let cool.

    Whisk egg whites until stiff peaks form, then gradually add sugar while continuing to whisk. Stir in cocoa powder. Fold in almond mixture. Transfer batter to a piping bag and pipe about 30 dots onto parchment-lined tray. Let sit lightly for about an hour. Then bake again at 150°C (300°F) for 10-12 minutes. Carefully remove from tray and cool.

    For the filling, mix cream cheese with chestnut puree, powdered sugar, and cocoa. Fill a piping bag with a smooth tip and pipe onto half of the macarons. Place remaining macarons on top, press lightly, and serve.
