Almond Biscuit

Ingredients
- 200 g semolina flour
- 20 g lard
- Salt
- 4 tbsp olive oil
- 400 g ground white almonds
- 5 tbsp sugar
- 3 tbsp orange blossom water (available at the pharmacy)
- 250 g powdered sugar
- 2 tbsp milk

Process the semolina flour with lard, a little water, salt and 1 tbsp olive oil into a soft, smooth dough. Roll the dough thinly and cut out circles about 10 cm in diameter.

Mix the almonds with sugar and orange blossom water to make a paste (if the paste is too dry, add another 1 tbsp orange blossom water). Place a small amount of almond paste on half of the dough discs and fold them closed. Press the edges firmly and fry in hot olive oil. Let drain on thick paper towels. Allow to cool slightly, then roll in powdered sugar. Serve immediately.

Process the same ingredients as above into a dough and cut out 10 cm circles. Fill with a small amount of almond dough (same ingredients) and roll into cigar shapes. Line a baking sheet with parchment paper, place the almond fingers on it and bake at 180°C for 15 minutes until golden.

Whisk powdered sugar and milk into a glaze and brush or dip the fingers in it. Let drain on a rack and dry.
