Ingredients
- 200 g alfalfa sprouts
- 1 handful purslane
- 4 slices Parma ham
- 4 crab claws (cooked and peeled)
- 2 tbsp white wine vinegar
- 1 tbsp Lemon Juice
- 2 tbsp grape seed oil
- Salt
- Pepper (freshly ground)
- 4 thyme sprigs
Instructions

Wash the sprouts and purslane, then drain well.

Combine vinegar, lemon juice, and oil in a bowl; season with salt and pepper. Add the sprouts and mix thoroughly. Fill glasses. Decorate with crab claws, ham slices, purslane, and thyme sprigs before serving.
