Alfalfa Sprout and Crab Claw Salad

Ingredients

  • 200 g alfalfa sprouts
  • 1 handful purslane
  • 4 slices Parma ham
  • 4 crab claws (cooked and peeled)
  • 2 tbsp white wine vinegar
  • 1 tbsp Lemon Juice
  • 2 tbsp grape seed oil
  • Salt
  • Pepper (freshly ground)
  • 4 thyme sprigs

Instructions

    Wash the sprouts and purslane, then drain well.

    Combine vinegar, lemon juice, and oil in a bowl; season with salt and pepper. Add the sprouts and mix thoroughly. Fill glasses. Decorate with crab claws, ham slices, purslane, and thyme sprigs before serving.
