Ingredients
- 4 tbsp butter
- 4 tbsp flour
- 150 g heavy cream
- 180 g goat cheese
- freshly grated nutmeg
- Salt
- pepper (ground)
- 6 Eggs
- 2 tbsp breadcrumbs
- butter (for greasing)
Instructions

Melt the butter and sauté the flour in it. Add the cream and cook gently for 2 minutes over low heat, stirring.

Preheat the oven to 200°C. Grease ramekins and dust them with breadcrumbs.

Crumble the goat cheese and stir into the roux.

Season well with pepper and nutmeg; add a pinch of salt carefully.

Separate the eggs. Beat the yolks into the mixture.

Whisk the egg whites until very stiff, adding a pinch of salt, then fold gently into the batter. Divide among the 6 prepared ramekins.

Bake the soufflés in the oven (fan‑forced 180°C) for 25 minutes until golden yellow. Serve immediately garnished with small flowers.
