Soufflé with Toasted Almonds

Ingredients
- 30 toasted almond kernels (chopped)
- 20 ml Grand Marnier
- 1 tsp grated orange zest
- 40 g sugar
- 125 ml milk
- 20 g butter
- 20 g flour
- 3 egg whites
- 2 egg yolks
- toasted almond kernels for topping

Grease 4 soufflé molds (125 ml capacity each).

Preheat oven to 200°C and fill a large, flat pot 2 cm high with water; place it on the middle rack.

Melt butter, stir in flour, deglaze with milk, bring to a boil while stirring, remove from heat and fold in one egg white and 20 g sugar. Let cool slightly, then whisk in egg yolks, chopped almonds, and Grand Marnier.

Beat remaining egg whites with 20 g sugar until stiff peaks form; fold into the batter.

Fill the soufflé molds about 1 cm below the rim, sprinkle with coarsely chopped toasted almonds, place them in the water bath, and bake for about 20 minutes. Serve immediately.
