Ingredients
- 800 g veal (from the shank)
- 200 g mushrooms
- 1 tsp starch
- 2 tbsp oil
- Salt
- Pepper
- 2 tbsp butter
- 2 shallots
- 250 ml white wine
- 200 g whipping cream
- Lemon juice
Instructions

Peel and finely dice the shallots. Cut the meat into half-centimeter-thick strips. Rub with starch. Slice the mushrooms into thin pieces.

Quickly sear the meat and mushrooms in hot oil, seasoning with salt and pepper. Set aside warm. Remove excess fat, then sauté the diced shallots in fresh butter, deglaze with wine and reduce to about half.

Add cream and cook until creamy. Season with lemon juice, salt, and pepper. Return the meat and mushrooms, reheat gently. Serve garnished with herb leaves.
