Zucchini with Tomato Sauce

Ingredients

  • 4 medium zucchini
  • 8 slices bacon
  • 700 g ripe tomatoes
  • 2 Garlic cloves
  • 1 small white onion
  • 2 tbsp freshly chopped basil
  • olive oil
  • Salt
  • Pepper (freshly ground)
  • sugar
  • nutmeg

Instructions

    Wash the zucchini, cut into not-too-thin slices and blanch in boiling salted water for about 8-10 minutes. Drain and set aside.

    Wash the tomatoes, briefly scald with hot water, peel, halve, core, and chop. Peel and finely dice the onion. Peel the garlic and split it once. Heat 4 tbsp oil and sauté the onion until translucent. Add the garlic, 2 tbsp water and the tomatoes. Cover and simmer over medium heat for about 10 minutes, stirring frequently. Remove from heat and season with 1-2 tsp sugar (depending on tomato acidity), salt, pepper and freshly grated nutmeg. Stir in the basil.

    Cut each bacon slice in half lengthwise and fry without fat in a pan. Arrange the zucchini on a plate. Sprinkle with pepper and pour the tomato sauce and fried bacon over it. Garnish with parsley or basil leaves before serving.
