Ingredients

  • 600 g cocktail tomatoes
  • olive oil
  • 400 g ricotta
  • 75 ml milk
  • 3 tbsp chopped mixed herbs (parsley, basil, tarragon… )
  • 1 Shallot
  • 1 Garlic clove
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash the tomatoes, place them on an oiled baking sheet, brush with oil and bake in a hot oven at 200 °C for about 20 minutes.

    Whisk the ricotta with the milk.

  3. 3.

    Peel and finely chop the shallot and garlic, then mix into the cheese cream with the herbs and season with salt and pepper.

  4. 4.

    To serve, spoon the ricotta mixture into small bowls and top with the roasted tomatoes.
