Zucchini with Mozzarella

The zucchini with mozzarella from Spoonsparrow is always a hit.
Ingredients
- 750 g yellow zucchini (3 yellow zucchinis)
- 750 g green zucchini (3 green zucchinis)
- 5 tbsp olive oil
- Salt
- Pepper
- 1 ball mozzarella (125 g, 20% fat in whole milk)
- 4 sprigs Mint
- 3 tbsp balsamic vinegar
- 0.5 tsp mustard
- 1 tsp rice syrup

Clean and wash the zucchini, cut crosswise into 1.5 cm thick slices; split smaller zucchinis lengthwise. Brush the cut surfaces with 3 tbsp olive oil and grill on a preheated grill for about 5 minutes on each side. Season with salt and pepper.

Meanwhile crumble the mozzarella with your fingers into small pieces. Wash, dry, and tear the mint leaves, then cut them into strips. Whisk together balsamic vinegar, mustard, rice syrup, and remaining olive oil to make a dressing.

Arrange the zucchini on a plate, top with mozzarella and mint, and drizzle the dressing over it.
