Zucchini with Crab Filling

Ingredients
- 1 kg zucchini (4-6 pieces)
- Salt
- Pepper (freshly ground)
- 2 onions
- 1 tbsp butter
- 2 tbsp dill, finely chopped
- 150 g crème fraîche
- 250 g North Sea crab meat
- 30 g parmesan cheese, freshly grated
Instructions

Wash the zucchini, trim the tips and stems, then cut lengthwise in half. Scoop out the flesh with a teaspoon leaving a 0.5 cm border and dice finely.

Blanch the zucchini halves in boiling salted water for about 4 minutes, remove, shock in ice water, and drain.

Peel and finely dice the onions. Heat 1 teaspoon of butter in a pan, add the onion cubes covered, and cook until translucent. Add the diced zucchini flesh, cover and steam, then stir in crème fraîche, season with salt and pepper, and simmer briefly. Fold in the crab meat with dill.

Fill the zucchini halves with the crab mixture, sprinkle parmesan on top, and dot with small butter pats.

Place the filled zucchini halves in a baking dish, add about 4 tablespoons of water, bake at 200°C for roughly 8 minutes. Serve immediately with toasted white bread slices.
