Zucchini Stuffed Roulades

Ingredients

  • 4 beef roulades
  • 1 onion
  • 1 garlic clove (finely chopped)
  • 1 bunch parsley
  • 2 sprigs Rosemary
  • 150 g minced meat
  • 1 tsp sharp mustard
  • 250 g zucchini
  • 200 ml red wine
  • 2 tbsp oil
  • 2 tbsp crème fraîche

Instructions

    Wash the roulades, pat dry, salt and pepper. Peel and finely chop the onion. Peel the garlic. Finely chop parsley and rosemary leaves. Mix minced meat with onion, mustard, garlic, and herbs; season with salt and pepper. Spread the mixture over the roulades.

    Wash the zucchini, trim ends, cut into sticks, place on the roulades, roll up and seal. Heat oil in a braising pot and sear the roulades all around. Add red wine and simmer gently for 1½ hours. Remove the roulades, puree the sauce and stir in crème fraîche.
