Honey-Glazed Lamb Leg with Potatoes

Ingredients

  • Lamb leg (with bone, about 2.5 kg)
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 600 g waxy potatoes
  • 4 shallots
  • 3 tbsp liquid honey
  • 1 tsp coriander seeds

Instructions

    Preheat the oven to 160°C (320°F) with both fan and top heating.

    Rinse the lamb and pat it dry. Season all over with salt and pepper, then brush with olive oil. Place in a roasting tin and cook for about 2.5 hours, adding water as needed, turning the leg occasionally and basting with its own juices.

    Peel the potatoes and shallots. Cut the potatoes into chunks and slice the shallots. Distribute the vegetables around the leg during the last 30-40 minutes of cooking, seasoning them with salt and pepper. Mix the honey with coarsely crushed coriander and brush the lamb every few minutes during the final 45 minutes.
