Green Power Soup
Enjoy a quick and healthy dinner with Spoonsparrow's Green Power Soup.
Ingredients
- 250 g waxy potatoes
- 1 onion
- 1 clove of garlic
- 400 g spinach
- 15 g mint
- 2 tbsp olive oil
- 280 g peas (split)
- 1 l vegetable broth
- 150 ml coconut milk
- Salt
- Pepper
- nutmeg
Instructions

Peel the potatoes and cut them into large pieces. Peel and finely chop the onion and garlic.

Wash and clean the spinach, wash the mint as well, shake it dry and pluck the leaves. Then roughly chop both.

Heat the olive oil in a pot, add the onions and garlic and sauté for 1-2 minutes over high heat until translucent. Then add the potatoes and sauté for another 3 minutes.

Reduce the heat and add the peas, mint and vegetable broth. Stir everything together and bring to a boil.

Then add the spinach to the pot and simmer for about 10 minutes until the potatoes are cooked through. Puree everything finely with an immersion blender until there are no more pieces left.

Finally, season the soup with 130 ml coconut milk, salt, pepper and nutmeg. Spread the soup on plates and garnish with the remaining coconut milk.
